How to Find and Fix Oven Hot Spots

Nearly every oven has hot spots that cause uneven baking. Here's how to find them and how to work around them.

If one side of your cookies is always darker, your cakes brown unevenly, or one corner of your roasting pan always scorches — your oven has hot spots. This is normal and very common. Here's how to find and work around them.

The Bread Test

The simplest way to map your oven's heat distribution:

  1. Line your oven rack with white sandwich bread, covering as much of the surface as possible.
  2. Bake at 175°C (350°F) for about 5 minutes.
  3. Check the bread — areas that are more golden or darker indicate hot spots. Areas still pale indicate cooler spots.
  4. Photograph the pattern for reference.

Why Ovens Have Hot Spots

  • Heating elements are at fixed positions (top/bottom or in the back). Heat radiates from them unevenly.
  • Natural convection causes hot air to rise, making the top rack generally hotter.
  • Manufacturer variation — even expensive ovens can have calibration differences of 10–15°C from one corner to another.

How to Work Around Hot Spots

Rotate your pans: Turn pans 180° halfway through baking. This simple step can dramatically improve even browning.

Use the right rack position:

  • Middle rack: best for most baking
  • Lower rack: good for pie crusts, pizza
  • Upper rack: good for browning the tops of casseroles, gratins

Leave space between trays: Baking two trays at once blocks airflow. If you must do two at once, switch positions halfway through.

Use a baking stone: Stones absorb and radiate heat evenly, reducing hot spots significantly.

In fan ovens: Hot spots are less severe, but rotating is still good practice.

Getting Your Oven Calibrated

If your oven seems significantly off (baking times wildly wrong), check with an oven thermometer. Many ovens can be re-calibrated — check your manual for the calibration offset setting. A professional appliance technician can also re-calibrate it precisely.
